Earth Day Recap
There’s something about hearing all the buzz about Earth Day that really makes you want to make changes! Last year, we planted seeds to try and grow our little garden. Too bad Mommy didn’t realize that the those suckers sprout way faster than I expected and I had no pots to transfer them into in time. MOM FAIL. (Check out that Throw Back Thursday pic of Sofia…where did that little nugget go?!)

Had to go with TBT on this one because we could plant seeds, take pics and keep JT from eating the dirt…oops! |
This year, with Sofia being in school and me being a room Mom, I sent her in with a big bag of giveaways for Earth Day/Show and Tell. A family friend was able to score is a big box of goodies from the Florida Department of Agriculture and Consumer Services. It had a coloring book and information on water conservation and the usefulness of pollinators.

We love our coloring book and conservation information. Hopefully this years seeds have better luck than last year! |
It also included temporary tattoos. So, of course, Sofia was thrilled to dig into those! We are using the books and coloring book to talk about what we can do to help the environment. One of Sofia’s favorite shows is Plum Landing on PBS and it helps reiterate some of what we read.
And because I love to *try* to grow plants, we are attempting seeds again…I’m prepared with pots this time!

How to Tell if You Are Mommydextrous
As Moms, we are tasked with challenge of juggling multiple things at one time…all the time. This applies if you are a working Mom or you are a stay at home Mom.

Spring/Easter Toddler Crafts
My toddler and I love crafts! I’m always so suprised how excited she get when we do a new “project”. By now, I’ve learned that the trick to a successful crafting session is to be fully prepared before we start. I have everything set up from materials to clean up wipes or plastic bags for trash ready. This helps alleviate the issue of leaving a toddler with freshly poured paint to walk away and grab paper or clean up materials! It also keeps me from losing her attention before we even get started.

She wasn’t nearly as confused as this picture suggests! |
Here what you need:
Paper
Scissors
Crayola Washable paint
Clothes Pins
Cotton Balls
Clamp the cotton ball with the clothes pin and use a different one for each color. We made an easter egg and a carrots. The leaves of the carrot were her handprint. I traced them and then cut it out while she painted. She is loving real paint these days, I’m going to need to invest in some brushes and a cute smock!
These were nap time crafts while baby brother was asleep. I haven’t been daring enough to bring him into the fold with our crafting just yet. What fun spring crafts have you done or seen?

Fitness Friday: Nutrition
Hi, welcome back to Fitness Friday with Coach Lindsey! Today I want to share some eating tips, along with a new favorite recipe! When I started my journey with the 21 day fix, I thought I knew what healthy foods were. Stay away from fried foods, white carbs and sugar and I should be ok, right? Well, that is true but portion control and consuming as much whole food as possible is more important that what to ignore.
· Try to consume at least 4 servings of veggies a day. I add a handful of spinach to my shakeology everyday and chopped mushrooms and peppers to my eggs in the morning.
· Another important food group to consume is protein. I aim to eat 4 servings of protein everyday! As long as it is lean and low in sodium, it is a good source!
· For my fruits, I eat two cups a day and it varies between mixed berries and a half an apple (that I add my natural nut butter to).
· I enjoy my one small serving of healthy fat each day such as avocado or hummus as well as my two small servings of brown carbs/starches (brown rice, sweet potato, whole wheat pasta, edamame).
If you can live 90/10 ration, you are in good shape! 90% of the time, eat whole, non-processed food and the other 10% of the time you can indulge (a tad) on sweets and treat, like a glass of red wine. Below is one of my favorite new recipes I have made!
Turkey Taco Lettuce Wraps
1 lb of lean ground turkey breast
1 tsp garlic powder
1 tsp cumin
1 tsp pink Himalayan salt
1 tsp chili powder
1 tsp paprika
½ tsp oregano
½ small onion, chopped in small squares
2 bell peppers, chopped in small squares (I prefer red and yellow)
¾ cup water
4 oz can of low sodium tomato sauce
8 large romaine lettuce leaves, washed
*optional
1/3 cup of shredded cheese
0% greek yogurt as sour cream substitute
Directions:
Brown turkey in large skillet on medium heat (if it sticks, add a tsp of olive oil). In a bowl on the side, mix the dry seasonings together. Be sure to chop your peppers and onion while this is cooking. Once the turkey is no longer pink, add dry seasoning and mix well. Add the oinion, peppers, water and sauce at this point and stir. Turn heat down to a simmer and cover with a lid for 20 minutes. Wash and dry the lettuce leaves. Once the meat mixture is finished, put one scoop in each leaf and top with shredded cheese, greek yogurt and hot sauce. ENJOY!
Next Week: Look forward to my transformation pics and news on my three day cleanse that is happening on Monday!
